My first attempt at Cheez-Its.
- 200g orange cheddar
- 42g unsalted butter
- 12g vegetable shortening
- .5 tsp salt
160g strong flour
2 tbsp ice water
Mix the first set of ingredients together. I used a food processor to make a fine grained mix. Add in ice water and mix together into a dough. Split into two balls and then put in the fridge.
Roll it out and roll it through a pasta machine at setting #1. Cut into small squares and poke in the middle with a toothpick. Then bake on a parchment or non-stick tray at 190C for 12 minutes.
Remove from tray right away and then dump on a pile on a tray. Bake for 5 minutes at 180C. Mix them up and bake at 180C for 4 minutes.
The results were ok. The ingredients on the box say yeast and vegetable oil - no butter, shortening or water. Though it must use water. The bigger issue is that I’m not sure about resting times with yeast generally, never mind for crackers. I’m thinking it would need to rest at least a while after going through the machine - otherwise what’s the point? More experiments in my future I suspect.
